In this blog, we’ve curated a selection of delicious recipes that are perfect for your Australia Day celebration. From classic BBQ favourites to sweet treats and drinks, these recipes will ensure your Australia Day menu is a hit.

AUSSIE BBQ SAUSAGES WITH ONIONS AND BREAD

No Australia Day BBQ is complete without the iconic snag (sausage), often served on a slice of white bread with caramelised onions. It's simple, satisfying, and oh-so-Australian.

Ingredients:

8 quality sausages (choose local varieties like beef, pork, or lamb)

1 large onion, sliced

2 tablespoons olive oil

8 slices of white bread or soft rolls

Tomato sauce or BBQ sauce, for serving

Instructions:

Cook the sausages: Heat the BBQ or grill to medium-high. Cook the sausages for 15–20 minutes, turning regularly, until browned and cooked through.

Caramelise the onions: In a frying pan, heat the olive oil over medium heat. Add the onions and cook, stirring occasionally, for about 10 minutes until softened and golden brown.

Assemble the snags: Place the sausages on slices of bread and top with caramelised onions. Add your favourite sauce (tomato or BBQ) and serve immediately.

For a fun twist, serve the snags with a side of chutney or salsa for extra flavour.

VEGEMITE AND CHEESE SCROLLS

Vegemite is an iconic Australian spread that has been a staple in Aussie households for generations. These Vegemite and cheese scrolls are a perfect snack or appetizer for your Australia Day gathering.

Ingredients:

2 cups self-raising flour

1 teaspoon baking powder

1/2 teaspoon salt

100g cold butter, cubed

1/2 cup milk (plus extra for brushing)

4 tablespoons Vegemite

1 cup grated cheddar cheese

Instructions:

Make the dough: In a large bowl, combine the self-raising flour, baking powder, and salt. Add the cubed butter and rub it into the flour mixture until it resembles breadcrumbs.

Add the milk: Gradually add the milk and stir until the dough comes together. Turn the dough out onto a floured surface and knead gently until smooth.

Roll and assemble: Roll the dough out into a rectangle. Spread the Vegemite evenly over the surface, then sprinkle with grated cheese.

Shape the scrolls: Roll up the dough tightly, then slice into 6–8 pieces. Place the scrolls on a baking tray lined with parchment paper.

Bake: Brush the tops of the scrolls with a little extra milk. Bake at 180°C (350°F) for 20–25 minutes, or until golden brown and cooked through.

For a variation, add ham or cooked bacon to the filling for extra flavour.

AUSSIE MEAT PIES

Meat pies are an Australian classic—flaky pastry filled with savoury fillings like minced beef, lamb, or chicken. These hand-held pies are perfect for an Australia Day celebration.

Ingredients:

500g minced beef or lamb

1 onion, finely chopped

2 cloves garlic, minced

1/2 cup beef stock

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper, to taste

1 sheet puff pastry, thawed

1 egg, beaten (for glazing)

Instructions:

Cook the filling: In a pan, heat a little oil and sauté the onion and garlic until softened. Add the minced beef or lamb and cook until browned. Stir in the tomato paste, Worcestershire sauce, thyme, and beef stock. Simmer for 10–15 minutes, until the mixture thickens. Season with salt and pepper.

Assemble the pies: Preheat the oven to 200°C (400°F). Roll out the puff pastry and cut into circles large enough to line your pie tin or muffin tray. Spoon the meat mixture into the pastry, then cover with another circle of pastry. Press the edges together to seal and trim off any excess. Brush the tops with beaten egg.

Bake: Bake for 20–25 minutes, until the pastry is golden and crisp.

Serve with tomato sauce or a side of mushy peas for an authentic Aussie meat pie experience.

LAMINGTONS

No Australia Day celebration would be complete without Lamingtons—sponge cakes dipped in chocolate and rolled in desiccated coconut. These iconic Aussie treats are a nostalgic favourite.

Ingredients:

2 cups self-raising flour

1 cup sugar

4 large eggs

1 teaspoon vanilla extract

1/2 cup butter, melted

1/2 cup milk

For the Chocolate Icing:

200g icing sugar

2 tablespoons cocoa powder

2 tablespoons butter, melted

3–4 tablespoons milk

For the Coating:

1 1/2 cups desiccated coconut

Instructions:

Make the cake: Preheat the oven to 180°C (350°F) and grease and line a square cake tin. Beat together the eggs, sugar, vanilla, melted butter, and milk. Fold in the self-raising flour until just combined. Pour the batter into the prepared tin and bake for 25–30 minutes, or until a skewer comes out clean.

Cool the cake: Allow the cake to cool completely before slicing into squares.

Make the icing: In a bowl, whisk together the icing sugar, cocoa powder, melted butter, and milk until smooth.

Coat the Lamingtons: Dip each cake square into the chocolate icing, then roll in desiccated coconut. Allow to set on a wire rack.

Lamingtons can be made ahead of time and stored in an airtight container for a few days, making them an ideal treat for Australia Day.

AUSTRALIAN LEMON, LIME, AND BITTERS COCKTAIL

Lime and lemon slices, for garnish

Instructions:

Mix the drink: In a tall glass, combine the bitters, lime juice, and lemon juice. Add ice and top with soda water.
